- Pizza with tomato and cheese

Pizza with tomato and cheese
Pizza dough
Equipment
- 2 bowls, 1 large, 1 small
- scales
- measuring spoon
Ingredients
- fork
- pizza trays
1 cup lukewarm water |
400 g plain flour |
4 tsp instant dried yeast |
1 tsp salt |
1 tsp sugar |
|
4 tsp olive oil |
This makes 2 large pizzas |
- Place water, yeast and sugar in small bowl, mix with fork and leave 5-10 minutes till it looks frothy
- Weigh flour and place with salt in large bowl.
- Add yeast mixture and mix till all combined
- Knead until soft and not sticky – about 10 minutes
- Wipe out bowl, and brush with olive oil. Roll dough in oil and cover with either lid, or clean dry tea towel and leave in warm draught free place for an hour, until doubled in size. (If a bit cool, the car is a good spot!)
Tomato Sauce
Equipment

Ingredients
1 jar of tomato passata |
I onion, chopped |
1 clove garlic |
2 tab olive oil |
salt and pepper |
Fresh herbs |
Method:
- Dice onion
- Heat oil in pan and cook onion gently until softened.
- Chop garlic finely and add to onion
- Cook gently for a few minutes, not allowing garlic to brown
- Pour in tomatoes, and cook slowly for 30 minutes
- Season to taste
- Chop herbs and add to sauce, cook a few more minutes
- Should be dropping consistency, not too runny.
- Set aside to cool.
Cheese
Equipment:
- grater
- bowl
Grate cheese and put in bowl.
Other toppings
You can put lots of things on pizza – we have some olives today, which will be sliced and scattered, also thinly sliced zucchini, tossed in oil, salt, pepper and dried oregano.
Assembling pizza
- Heat oven to 220
- Punch dough down and roll/stretch into a round shape – or to fit available tray.
- Flour pizza tray, place dough on top and spread tomato sauce with back of a spoon, leaving a 2cm gap at the edge – this makes it easier to eat, and the edges can burn.
- Sprinkle with cheese, and other toppings if using.
- Bake in oven 15-20 minutes until browned on the bottom.
2. Stir fry chicken with noodles and vegetables

Ingredients
1 chicken breast |
1 clove garlic |
1 piece of ginger |
2 spring onions. |
1 handful of snowpeas |
1 handful bean shoots |
1 bunch of bok choy |
125g rice or egg noodles |
1/2 c chicken stock or water |

Marinade
2 tablespoon soy sauce 1 tablespoon oyster sauce
1 tablespoon oil 2 tsp cornstarch
Method
- Cut chicken into thin slices, then in half.
- Add cornstarch to soy sauce - stir to make sure no lumps, then add chicken to marinate. Set aside in fridge
- Chop garlic and ginger and place on tray.
- Peel and chop spring onion finely, and place on tray
- Peel and slice carrot, and place on tray
- Slice silver beet thinly, and place on tray
- Boil water and carefully drop in noodles to cook.
- Drain in colander
- Heat oil in pan and cook chicken. When all edges are sealed, add stock and bring to boil
- Add bok choy, bean shoots and spring onion.
- Stir to combine until the greens are wilted.
- Add noodles to pan and heat through gently mix with tongs.
- Place in a large bowl to serve.
Carrot and coconut salad

Ingredients
2 carrots |
1 tablespoon olive oil |
2 cups shredded coconut |
1 tablespoon vinegar or lemon juice |
1 tablespoon of honey |

Method
- Peel and grate carrots
- Measure out coconut
- Mix oil and vinegar/lemon and honey
- Combine all ingredients in bowl
Lemon cordial
Equipment

Ingredients
5 lemons |
1 cup sugar |
1 cup water, 6 cups water |
mint |
Method
- Scrub lemons in some water
- Zest lemons
- Squeeze juice
- Bring 1 cup water and sugar to boil, with zest and simmer until a light syrup and sugar is dissolved. Strain, and chill.
- Add lemon juice and remaining water
- To serve add ice cubes and some shredded mint leaves.
5. Chocolate Brownies

Method
- Preheat the oven to 160C
- Place the chocolate and butter in a saucepan over low heat and stir until smooth. Allow to cool slightly.
- Place the sugar, eggs, cocoa, flour and baking powder in a bowl.
- Add the chocolate mixture and mix gently until combined.
- Pour the mixture into a 20cm square slice tin lined with baking paper.
- Bake for 50 minutes or until set. Cool slightly in the tin. Cut into slices and serve warm or cold.
